Stock Controller

Responsibilities

• Inventory Management: Overseeing stocktaking and maintenance of precise, accurate inventory records of all items.
• Cost Computation: Collect and collate food and beverage stock data and compute costs for management review.
• Financial Reporting: Submit daily, weekly, and monthly cost reports, variance analyses, wastage reports, and forecast reports.
• Advisory: Provide "red alert" reports and advise management when costs fall outside acceptable ranges.
• Event Costing: Submit events cost reports clearly indicating cost aspects and incidental profit margins.
• Cost Control Analysis: Monitor and control food and beverage costs to ensure they remain within budgets and identify areas of wastage.
• Revenue Auditing: Scrutinize and audit POS transactions, including verifying void bills and complimentary items.
• Menu Engineering: Participate in menu costing and pricing to ensure profitability, using cost reports to suggest modifications.
• Process Improvement: Identify weaknesses in operational control procedures and recommend improvements.
• Procurement Collaboration: Verify receiving procedures for quality and price accuracy.

Qualifications and Requirements

• Academic: O-level certificate with a mean grade of C.
• Professional: A degree or diploma in stores management, procurement, hospitality management, or a related field.
• Experience: 5 to 10 years of experience in a similar position at a busy high-end club or hotel.
• Communication: Highly developed analytical, communication, and presentation skills.
• Technical Knowledge: Deep understanding of hotel/club inventory systems, POS systems, and materials control systems.
• Software Proficiency: Proficiency in accounting software and Microsoft Excel.
• Attributes: Attentive to detail and strong organizational skills.
