Role Overview
Wilderness is looking for a Food and Beverage Supervisor to join the team in Kenya. The primary purpose of this role is to ensure guests have a positive experience at the camp by exhibiting excellent customer service. You will be responsible for overseeing and supervising waiters in their daily duties, from greeting guests to ensuring the timely delivery of meals and beverages.
Key Responsibilities
Staff Management and Operations
Allocate duties and prepare staff leave/off schedules.
Maintain a professional image and clear communication with the team, ensuring fairness and respect.
Ensure high standards of punctuality, appearance, and personal grooming among staff.
Eliminate hazardous working conditions and practices to maintain safety.
Keep records of indiscipline cases and report them to the Restaurant Manager.
Service Excellence
Oversee the cleanliness and tidiness of the dining area, including floors, furniture, and fittings.
Supervise the preparation of tables, including the setup of linen, silverware, and glassware.
Manage table allocation based on guest occupancy and specific requests.
Greet and escort guests to their tables professionally.
Supervise menu presentation and provide detailed information on portions, ingredients, or food allergies.
Ensure waiters are well-informed about daily specials and offer menu recommendations.
Encourage up-selling of additional products where appropriate.
Workflow Coordination
Ensure waiters take accurate food and drinks orders and communicate them effectively to the kitchen.
Monitor the timely service of food and beverages.
Oversee the inspection of dishes and kitchenware for cleanliness and presentation.
Ensure prompt clearance of used plates, glasses, and silverware.
Adhere to all relevant customer service guidelines and HACCP/health regulations.
Requirements
Qualifications and Experience
A minimum of a Food & Beverage Service & Sales course from a reputable college.
A BA/BSc/HND degree is generally preferred for this level of responsibility.
At least two (2) years of experience in a similar supervisory position within the hospitality sector.
Skills and Interests
Strong leadership and organizational abilities.
Proven problem-solving skills.
Good verbal and written communication skills; knowledge of a foreign language is an added advantage.
Proficient in basic computer applications.
A passion for wildlife and a commitment to sustainability and conservation.
