The Food & Beverage Cost Controller at The Fairmont Norfolk, a historic luxury hotel in Nairobi, is responsible for auditing, reconciling, and analyzing the hotel's daily revenues and costs. Reporting to the Chief Accountant, this role ensures the integrity of financial operations within the Food & Beverage department, maintains strict inventory controls, and provides critical data for menu pricing and profitability.
Key Responsibilities
Revenue Auditing & Analysis: Audit, reconcile, and analyze daily revenues by ensuring night audit checks are performed. Review daily reports before circulation, ensure revenue taxes are compliant with laws, and investigate banking overages/shortages.
Cost Control: Maintain daily cost percentages for food and beverage; prepare daily reports. Reconcile cost deviations between requisitioned costs and physical inventory costs monthly.
Inventory Management: Supervise and assist in physical inventories. Maintain liquor storeroom perpetual inventory and coordinate with the Executive Chef to track high-cost items.
Invoice & Verification: Examine all food, beverage, and general item invoices. Verify quantities against order sheets and purchase orders, comparing quoted prices to invoice prices.
Financial Reporting: Perform month-end procedures for revenue and collections reconciliation. Prepare preliminary cost reports and menu potentials.
Menu Engineering: Update menu costs quarterly for all outlets. Work with the Food & Beverage Manager to develop potential cost of sales and future menu pricing adjustments. Perform yield tests of specific products to ensure quality and accurate pricing.
Operational Support: Total and code invoices daily. Ensure items are prepared and stored as specified and review daily production against cover forecasts.
Compliance & Standards: Adhere to hotel regulations, safety laws, and maintain the highest standards of personal hygiene, appearance, and conduct.
Requirements
Experience: More than 3 years of experience in the same field (Cost Control/Accounting within hospitality).
Education: Bachelor’s Degree in Finance, Hospitality, or a related field.
Professional Qualification: CPA Section 1 certification.
Systems Knowledge: Proficiency in Sun System, Opera Cloud, Materials Control, and Symphony.
