Job Description

We are looking for an Executive Sous Chef to take charge of all activities related to the kitchen. This role involves managing kitchen staff, suggesting recipes for menus, ordering stock and equipment, and ensuring that all meals served in the outlets and banquets are both delicious and nutritious. The successful candidate will lead the culinary team while personally assisting in all areas of the kitchen, including food production, purchasing, and sanitation.
Responsibilities
Lead, mentor, and train the Culinary Operations team.
Ensure the correct preparation and presentation of food items at a consistent high level.
Monitor food costs under the supervision of the Executive Chef.
Support the Executive Chef with administrative responsibilities including scheduling, payroll, and expenses.
Supervise all methods of food preparation, cooking methods, portion sizes, and presentation.
Coordinate and supervise the ordering of all food supplies and kitchen equipment; approve products to meet quality standards.
Train, develop, discipline, supervise, and organize all kitchen personnel on a regular basis.
Lead regular meetings with the kitchen staff to set expectations for operations and Heartists.
Supervise the maintenance and cleanliness of all food preparation equipment.
Supervise and maintain the staff canteen and the stewarding team.
Develop and ensure a safe working environment for all staff.
Communicate regularly with the Executive Chef regarding kitchen activities and results.
Qualifications and Requirements
A degree or diploma in Culinary Arts from a recognized institution.
A minimum of 7-10 years of professional culinary experience.
At least 3 years in a leadership role as a Chef de Cuisine or Executive Sous Chef.
Extensive knowledge and mastery of various culinary techniques and cuisines.
Strong leadership and team management skills, with the ability to motivate and mentor a diverse team.
Excellent organizational and time management abilities.
