This role oversees the quality and compliance of dried fruit production, ensuring that all processes from raw material intake to finished goods meet stringent food safety and quality standards.\n\n### Key Responsibilities\n\n#### Receiving and Pre-Processing\n* Inspect incoming fruits for quality, ripeness, pest damage, contamination, and compliance with raw material specifications.\n* Strengthen and implement improved sampling methods and plans.\n* Conduct random sampling and monitor Brix levels, external/internal defects, and other rejection factors (e.g., undersized fruit).\n* Record intake quality data and supplier performance metrics and share feedback with the sourcing team.\n* Ensure proper storage and ripening conditions are maintained; monitor and record ripening conditions per lot to support production planning.\n\n#### Production Quality Control\n* Verify grading standards, monitor peeling/slicing quality, and supervise preservation processes ensuring correct dosing of preservatives.\n* Monitor Critical Control Points (CCPs) including drying temperature, time, and moisture reduction curves.\n* Test products against specifications (moisture, water activity, color, texture). Approve or reject batches immediately after drying and prior to packing.\n* Ensure non-conforming batches are documented in line with FSSC/BRC and rework is completed within 2 days.\n\n#### Systems and Compliance\n* Support the Food Safety Management System (FSMS) and Safety, Health, Environment, and Quality (SHEQ) requirements.\n* Ensure compliance with BRC Global Standards, FSSC 22000, ISO 22000, GMP, and HACCP.\n* Manage laboratory testing schedules and coordinate external lab testing for microbial, sulfur, or pesticide residues.\n* Track chlorine levels in fruit washing and conduct routine water testing to ensure sanitation standards meet food safety requirements.\n\n### Career Growth and Development\nOne Acre Fund has a strong culture of constant learning and invests in developing people. You will have weekly check-ins with your manager, access to mentorship, training programs, and regular feedback.
